This recipe for Tomato rice serves for a maximum of 3-4 people.
Things required
- Tomato - 4-5 Medium sized, Chopped
- Onion - 1 medium sized, Diced
- Boiled rice - 4 cups
- Red chillies - 3 Or 4 max.
- Chana dal - 1 Table spoon
- Urid Dal (Optional) - 1 Table spoon
- Mustard - 1/4 Tea spoon
- Curry leaves - 6-8 leaves
- Oil - 1 Table spoon
- Salt - To taste
- Chilli Powder - 1-2 Table spoon
- Turmeric - 1/4 Tea spoon
- Garlic - 2-3 Cloves.
Steps
- In a wide based pan, add oil and wait for it to get heated.
- Once the oil is heated, add the mustard seeds and wait for splatter.
- Add the curry leaves, red chillies (do not let it burn), within few seconds of adding the spices add chana dal and Garlic.
- Give it a mix up, once the chana dal is a bit brown, add the diced onions.
- Let the onions fry a bit, add a little salt to speed up the process.
- Once the onions get to a transparent stage, you can add the chopped tomatoes. Make sure the flame/heat is medium, the tomatoes should be fired completely.
- Once it is a bit fried, add the Chilli powder, Turmeric and a bit of salt and keep frying.
- Once the Tomato is a bit golden, you will be able to see the tomatoes now form a paste, where the oil will start leaving the paste. That's your cue, to add rice.
- Add the rice to the mixture bit by bit, do not add too much rice else you risk the chance of loosing flavor. Check for salt, add if required.
- Food is ready to be served !
My Recommendation:
Tomato rice goes really well with hard boiled eggs, with a glaze of Ground pepper and salt. As the food is a bit spicy, you can compliment its flavor if you have a mild vegetable option !
